This is a popular and very tasty Indian chat.
Serves 2-3 persons
Ingredients
4 medium size potatoes
1 cup yellow peas (wash & soak in enough water for 7-8 hours)
Salt as per taste
Pinch of soda-bi-carbonate
¼ tsp Garam masala Powder
¼ tsp Jeera powder
½ tsp coriander seeds powder
1 cup grated gud/jaggery
½ cup tamarind juice
½ cup finely chopped onion
4-5 green chillies
1 cup finely chopped green coriander
2-3 tsp- red chilli powder ½ tsp Haldi powder
Oil
1 tsp Jeera
1 tsp Black salt
Method
1) Boil, peel and mash potatoes, add 1 tsp salt. Make 4 patties (use cutlet-mould to make patties) and shallow-fry both sides, on a tawa, till they turn golden-brown.
2) Pressure-cook peas with a pinch of soda & 1 cup water till done.
3) Heat 1 tbsp oil in a pan, add jeera, when jeera starts to change its colour, add ½ tsp
haldi & cooked peas, salt, 1 tsp red chilli powder, ¼ tsp Garam masala powder, ¼ tsp
jeera powder, ½ tsp Coriander seeds powder, add a little water and cook it. It should
have a thick consistency. This mixture is called ragada.
4) Dissolve gud in tamarind juice, add black salt and 1 tsp red chilli powder and boil for 4-5
minutes.
5) Grind chillies, ¾ cup coriander, salt and a little water together to make green chutney.
6) Mix ¼ cup remaining coriander in chopped onions and keep aside for garnish.
7) Place a patti in a serving plate, top it with 1or 2 spoonfuls of ragada, 2 tsp chopped
onions, 2 tsp gud-tamarind sauce and 2 tsp green chutney.
8) Serve hot.
