This is a popular kheer in South India.
Quantity 1.1/2 litre
Ingredients
1 cup rice
1 tbsp pure ghee
2 litre milk
1½ cup sugar
½ tsp green cardamom powder
4 tsp milk masala
3 cup milk & 1 cup water
10 almonds (Blanch in hot water, peel and sliced)
Method
1) Wash and cook rice in 3 cups of milk and 1 cup of water.
2) Mash the cooked rice coarsely. Then, add ghee and sugar and cook till the sugar dissolves. Keep stirring continuously.
3) Boil and reduce 2 litres of milk to 1 litre. Add this 1 litre milk to the above mixture, mix it and bring it to a boil.
4) Add milk masala, cardamom powder and slices of almond. Mix well.
5) Chill in a refrigerator for half an hour before serving.
