Prawn Pulav
I recommend using fresh prawns instead of frozen ones for this recipe.

Serves 3-4 persons

Ingredients
½ kg medium size prawns
1 ½ cups basmati rice
3 big onions (chopped)
6-7 green chillies
1 cup coriander
2-3 garlic cloves
A small piece of ginger
1 tsp turmeric powder
4-5 tbsp oil
1 ½ tsp salt or as per taste

Method
1 ) Wash, de-shell and de-vein prawns.
2)  Cook rice in approx 3 cups of water. Spread the cooked rice on a large dish and let it cool.
3)  Grind garlic, ginger, chillies and ½ coriander.
4)  Heat oil in a pan or a kadai. Add the onions and saute on a medium flame till onions become golden brown.
5)  Add the ground chilli paste and turmeric powder. Saute for 2-3 minutes.
6)  Add the prawns and salt. Let the prawns cook. Do not cover. The prawns will change colour to a milkfish white when cooked. Break one with a spoon to confirm if cooked. Do not overcook.
7)  Lower the heat. Add rice slowly to the prawns and mix gently without breaking the rice grains.
8)  Garnish with remaining coriander and serve hot.
