Solkadhi
This is a popular Kokani recipe. Made with the milk of coconuts, it is light mauve in colour due to the kokam used.

Ingredients
1 fresh coconut
1 green chilli
2 garlic cloves
2 tsp chopped green coriander
1/4 cup kokam juice(brand name-YOJAK is good) or 8 kokams
Salt as per taste

Method
1)Scrape the coconut and grind with chilli and garlic, and 2 cups warm water. Squeez the mixture through a strainer or use muslin cloth. Keep aside first coconut milk.
2)Reuse the mixture  & grind with another on 2 fresh cups  of  warm water and squeeze the second milk and keep aside.
3)Repeat the process for a third time.
4)Soak kokams in 1/4 cup of warm water for an hour. Remove and squeeze the water out of the kokams.
4)Mix all of the coconut milk. Add kokam juice and chopped coriander. Add salt if required.
5)Serve cold with fried fish and rice or enjoy it just by itself when you need a cool refreshing drink.
