Vegetable Cutlets
Check how easy they are to make. A nice, quick dish to make when you have guests coming over for tea.

Serves 4 persons

Ingredients
2 cups carrot (grated)
1 cup French beans (finely chopped)
1 cup onion (finely chopped)
1 cup green peas (boiled)
4 medium size potatoes (boiled & peeled)
3-4 slices of bread
1 cup bread crumbs powder
4-5 green chillies
½ inch ginger
3-4 garlic cloves
Salt as per taste
Oil for frying
½ cup chopped fresh green coriander 

Method
1) Grind chillies, ginger and garlic together.
2) Steam grated carrot & chopped French beans.
3) Mash potatoes & boiled green peas.
4) Soak bread slices in water and squeeze out the water. Mash bread & mix with
    potatoes, green peas, carrot, french beans, onion, ground masala, salt & coriander.
5) Divide into (small potato size) balls,press them gently with your palms and then roll 
    the cutlet in breadcrumbs powder.
6) Heat 2-3 tbsp oil in a pan, place some cutlets into the hot oil, and shallow-fry till
    golden-brown on medium heat. Turn over & fry the other side. Repeat the process till
    all cutlets are done.
7) Serve hot with tomato sauce.
