This is a South Indian speciality.
Quantity 18-20 Medu Vade
Ingredients
2 cups urad Dal (skinless split black gram)
¼ tsp hing powder
8-10 kadhi patta
1 tsp Jeera powder
2-3 (optional) Green chillies
Oil – to deep fry
Salt as per taste
Method
1) Wash and soak urad dal for 6 hours. Drain excess water and grind to a thick paste.
2) Add hing, kadhi patta, salt, jeera powder and minced green chillies to the batter and mix well.
3) Heat oil in a kadai.
4) Wet your palms, take a spoonful of batter and shape it in to a circle/ball and make a hole in the center. You can use a thick plastic piece like a milk bag to shape the vada. Remember to wet the surface as well as your palms.
5) Deep-fry medu vadas in medium hot oil till they turn crisp and golden brown.
6) Serve hot with sambhar and chutney.
