Many recipes also use different vegetables like (fried pieces of) bhendi or baingan. You can use the vegetables you like.
Ingredients
1 cup Toor Dal
1 cup chopped tomato
1 cup chopped onion
1 cup dudhi/ash gourd/bottle gourd ( peel &cut into medium pieces)
1 cup cauliflower (medium pieces)
10 -12 pieces of shevaga/drumsticks
2-3 tbsp chinch/tamarind pulp or as per taste
Salt as per taste
8-10 kadhi patta
¼ cup oil
For Tadka - ½ tsp rai, ½ tsp haldi, ½ tsp hing, 4-5 whole dry red chillies
2-3 tbsp Sambar Masala
Method
1) Pressure cook Toor Dal and drumsticks in two separate containers. Blend and mix cooked toor dal well.
2) Heat oil in a kadai & make a Tadka with rai, haldi, hing, kadhi patta and red chillies.
3) Add onion and sauté for a minute. Add Cauliflower, bottle gourd. Add a little water, cover it with a lid and let it cook. Now, add tomato and drumsticks and sauté for a minute.
4) Add tamarind pulp and toor dal. Pour 5-6 cups of water or as per desired consistency.
5) Dissolve the sambar masala in ¼ cup water and add it to the above mixture.
6) Add salt & bring it to boil, then lower the heat.
7) Serve hot with Rice or with snacks like Idli, Medu-vada and Dosa.
