Indian Masala / Ground Spices Mix |
These special Indian Masalas or Mix of spices are integral to indian cooking... they are what gives that added zing to indian food!!
Garam Masala – A hot mix of spices to be prepared as follows.
Lightly roast and grind the following spices: Black cardamom 8-10, Green cardamom 15-20, Cinnamon 15-20 pieces (1” each), Cloves 1 tablespoon, Mace 1 flower, Nutmeg 1, Peppercorn 1 tablespoon, Cumin seeds ½ cup, Coriander seeds 2 tablespoons.
The masala usually lasts a long while when stored in air tight containers.
Kala Goda Masala – This masala tends to be slightly sweet rather than hot . Imparts a unique flavour when added to certain vegetable and rice preparations.
The ingredients are : Coriander seeds 500 gm., Cumin seeds 150 gm., Sesame seeds 250gm., Dry coconut 250 gm., Salt ½ cup, Cloves 1 tablespoon, Cinnamon 5-6 pieces (1” each), Bay leaves 5-6, Caraway seeds (Shah-jeera) 1 tablespoon, Turmeric powder 1 tablespoon, Asafetida powder 1 tablespoon, and Dried Red chillies 15-20, Oil ½ cup.
Method – Saute all ingredients, except for coconut and sesame seeds, in a little oil one by one. Dry roast coconut and sesame seeds, that is without oil. Grind to powder. (Store in an airtight container).
