This yummy barfi can be made even without mangoes. You can substitute Mango pulp with 1/2 cup milk.
Ingredients
3 cups scraped fresh coconut
3 cups sugar
1 cup Alphonso mango pulp
1 teaspoon pure ghee (for greasing)
Method
1) Mix all ingredients in a thick-bottom cooking pan.
2) Stir constantly on a low flame.
3) When the mixture leaves the sides of the pan and becomes very thick, remove from flame.
4) Keep mixing well for 10 minutes.
5) Grease a plate and pour the mixture into the plate. Press and pat gently.
6) Keep aside and let it cool. Cut into small diamond size shapes.
