Lemon Pickle/ Limbache Lonche Upasache
Store in a pickle bottle and enjoy for upto a year.
Ingredients
25(0.9 to 1kg.) lemons
1-1/2 kilo-sugar
1/2 cup-red chilli powder
4 tablespoons-salt
3 cups water
100 grams ginger
Method
1) Wash and wipe the lemons with a clean cloth.
2) Cut each lemon into quarters.
3) Wash, clean & dry the ginger; peel the skin and cut into pieces.
4) Add salt to the ginger & lemon pieces. Store the lemon-salt mixture in a clean and dry glass jar with lid for 8 days. During the period, stir the mixture with a clean and dry spoon once in two days.
5) After eight days, mix sugar and water in a stainless-steel patila and make pakka paak/three threads sugar syrup. Add salted lemon pieces and bring it to a boil. Add red chilli powder.
6) Keep aside to cool in a dry place.
7) Store in a pickle bottle and enjoy for upto a year.(Always use a dry spoon to scoop out pickle)
Tip
The Pakka Paak or three threads sugar syrup is made as follows.
Mix water and sugar in a stainless steel patila as per specified quantity. Put the patila on stove & allow it to heat slowly till the sugar melts.
Then keep boiling the sugar syrup till such time that when a drop of this sugar syrup is put on a plate it solidifies into a small hard ball.
Or take a saucer with little cold water,put a drop of this sugar syrup into it and if it settles like a bead, the pakka Paak is done.
