Serves 4-5 persons
Ingredients
1 cup pasta (macaroni/penne pasta)
1 packet white button mushrooms
1 bunch spinach
4 cups milk
5 tbsps maida
1/2 tsp pepper powder
3 tsp sugar(or as per taste)
1/2 cup finely chopped onion
100 gm butter
1 cup grated cheese
1/2 cup fresh cream (thick)
2 tbsps bread crumbs
Salt as per taste

Method
1) Boil 4 cups water in a pan. Add pasta, a few drops of oil and cook for 7-10 minutes. Remove the excess water and run it under cool water. Strain and keep aside.
2) To make white sauce - Take 2 tbsp butter in a pan, add onion and saute till light brown. Keep flame on low, add maida and saute for 3-4 minutes. Slowly add milk, mix well to avoid lumps. Keep stirring continuously and bring it to a boil. Turn off the heat, add sugar, salt and pepper. Keep aside and let it cool.
3) Clean and chop mushrooms in half. Take 1 tbsp butter in a pan and saute mushrooms for 3-4 minutes. Do not overcook, turn off the heat before they release water.
4) Wash and chop spinach leaves finely. Take 1 tbsp butter in a pan, add spinach and cook. Squeeze out the excess water.
5) In a bowl, add the pasta, white sauce, mushrooms, spinach and fresh cream. Mix well together.
6) Pour the mixture in a casserole,garnish with the grated cheese and bread crumbs. Put some butter dollops on top.
7) Bake in a pre-heated oven at 180 C for 20 minutes. Serve hot.
