Quantity 60 chaklis

Ingredients
8 cups Bhajani
1/4 cup white sesame seeds/Til,
1 teaspoon ajwain/ Ova,
2 tablespoon red chili powder
1 1/2 tablespoon Salt
1/4 teaspoon turmeric powder/Haldi
1/4 teaspoon asafoetida/Hing,
1 cup ghee
1 Kg refined Oil for frying
Hot water (not boiling hot )  

Method for Chakli
1) Heat 1 cup ghee in a pan. Pour it in large Paraat(A circular metal plate with edges) .
2) Add til,ajwain, salt,haldi, chili powder,hing and 8 cups bhajani. Mix all items well.
3) Add 3-4 cups hot water and knead well and add more hot water if needed. (Do not use excess water to make soft pliable dough instead knead it well to make a soft pliable dough)
4) Put some of this dough in the chakli mold. 
5) Press the piston of chakli mold and make chaklis in circular motion starting from centre of the chakli. Drop them on a plastic paper.
6) Heat oil in a pan. When oil is medium hot, turn the flame to medium and lift chaklis gently one by one, fry 4-5 chaklis over medium to low heat. Avoid overfrying.  Remove the chakli from the oil when Chakli is golden brown . Repeat this process till all Bhajani dough is used up. spread the  fried chaklis on absorbent paper to cool. Then store in airtight container. 

Tips - Use the bhajani dough immediately so chaklis will not crumble .
          If you want to make in large quantity, prepare bhajani dough after the first dough is used up.
