Ingredients
2 cup cashewnuts/Kaju
1.1/2 cup Sugar
3/4 cup water
1/2 cup Khoya/Khava
1 tsp Velachi Powder/Kesar Method
1) Grind kaju into powder. Crumble khoya/mawa into fine granules.
2) Roast khoya in a non-stick pan for 4-5 minutes.Keep aside.
3) Mix sugar and water in non-stick kadai and place on stove and cook. Prepare one-string/ektari sugar-syrup.
4) Add kaju powder and keep stirring till it is very thick.
5) Remove from heat and add roasted khoya, velachi powder and mix well.
6) Keep stirring for 3-4 minutes. Spread on a plate and knead the mixture to make a soft dough.
7) Roll the kaju dough and cut into dimond shape or use modak-mould and shape into modaks.
