Vaal usal is a special preparation from the Konkan coast. It's often prepared during weddings. Vaal are also referred to as Dalimbi or Birdya.

Ingredients
2 cups Dalimbi
1-2 cup hot Water
1 tbsp Red Chilli Powder or as per taste
1 tsp Salt or as per taste
2 tbsp grated Gud or as per taste
1-2 tbsp Oil
5-6 Curry Leaves
1/2 cup scraped & ground Fresh Coconut
1/2 cup chopped Fresh Green Coriander
1/4 tsp Mustard Seeds
1/4 tsp Hing
1/4 tsp Haldi
1/4 tsp Jeera and 1 tbsp grated dry Coconut( roasted & ground)
How to prepare skinned and sprouted Dalimbi
1) Wash & soak the beans overnight in plenty of water. Drain all the water the next morning and rinse the beans until the water runs clear.
2) Tie the beans in muslin cloth or place them in sprouter. Keep them in a warm place for 24 hours or till they sprout.
3) Soak the sprouted beans in lukewarm water for an hour, so that their skin can come off easily.The best way to remove their skin is to press each one between the thumb and index finger and pull the skin off.
4) Once they are peeled, wash and keep them aside.
Method
1) Heat oil in a kadai,add mustard seeds; when they splutter lower the heat.
2) Add hing, haldi,curry leaves and dalimbi; stir and cover the kadai for 2-3 minutes.
3) Remove the lid and add hot water and cook till they become soft.
4) Add gud, salt, red chilli powder, ground jeera-dry coconut, and cook for 2-3 minutes.
5) Add ground fresh coconut, simmer for a minute.
6) Garnish with chopped fresh green coriander. Serve hot.
