Turn Spinach from Yeww to Yumm. A healthy, tasty and colourful soup. For the waist watchers-skip the butter & cream.
Serves 4 persons
Ingredients
3 cups chopped spinach
1 medium size onion
2 medium size tomatoes
2 tbsp butter
1/2 cup Fresh cream
Salt as per taste
1/4 tsp black pepper powder
Method
1) Pick & wash spinach leaves and its tender stems, and chop finely.
2) Chop onion, tomatoes.
3) Heat 1 tbsp butter in a thick bottom patila, add onion, when onion turns translucent, add tomatoes, Add spinach & saute for 2-3 minutes.
4) Add 4-5 cups of water & bring it to a boil. Remove from the heat.
5) Grind it (with the help of handmixer) & strain.
6) Add 1/4 tsp salt, pepper powder & again bring it to boil, add 1 tbsp butter.
7) Serve in serving bowls & garnish with 1tsp fresh cream in each bowl.
