Quantity: Serves 4-5 persons.
Ingredients For Curry –
1 kg fresh cut-chicken (Defrost if frozen)
3 big onions (finely chopped)
2 tbsp ginger-garlic paste
2 green chillies (finely chopped)
1 ½ tsp garam masala
1 tsp red chilli powder
1 tsp kanda masala (optional)
1 tsp goda masala1
¼ tsp salt or as per taste
½ cup oil1
½ cup warm water
For Marination –
½ cup dahi/plain yogurt
½ tsp haldi/turmeric powder
½ tsp ginger-garlic paste
1 tsp garam masala
½ tsp red chilli powder1
½ tsp salt
Method
1. Wash and clean chicken. Add all the ingredients for marination and mix well. Keep it in the refrigerator and let it marinate for at least 1 hour.
2. Heat oil in a big kadai. Add the chopped onions and let it fry till the onion changes to a pinkish colour. Now add ginger-garlic paste and sauté till the onion turns a light brown colour.
3. Add green chillies and all the masala powders. Let it fry on a medium flame till oil leaves the sides of the pan.
4. Add the chicken and mix well. Saute for 5 minutes on a medium flame.
5. Add the water, salt and mix well together. Cover with a lid and let it cook on a medium-low flame for about 45-50 minutes. Stir the chicken after every 10-15 minutes. Add a little water in between, if necessary, as per desired curry thickness.
6. Serve hot with rice or chapatti.
