A very popular Maharashtrian snack. If you stuff it between thick slices of bread, what you end up with is Wada Paav - probably the most famous fast food of Maharashtra.
Quantity 7-8 Wadas
Ingredients
½ kg medium size potato
1 inch piece of ginger
10 garlic cloves
5-6 green chillies
A pinch of soda-bi-carbonate
½ tsp haldi powder
Salt as per taste
1 tsp red chilli powder
2-3 tbsp chopped fresh coriander
1 ½ cup besan
Oil for frying
Method
1) Make paste of ginger-garlic-green chillies.
2) Boil, cool, peel and mash potatoes and keep aside.
3) Mix besan, red chilli powder, salt and soda, add water as require for making thick batter.
4) Heat 1tbsp oil, add ginger-garlic paste, add mashed potatoes, Haldi powder, salt and chopped coriander. Mix and let the mixture cool. Form lemon size balls. Flatten the balls little bit.
5) Heat oil in a kadai. Dip the potato balls in to besan batter and deep-fry till they turn golden-brown,
6) Serve hot with tomato sauce or chutney.
